4. "Three Preparation" Turkey 
This menu item features three various preparations utilizing a whole turkey. The dish is great for any occasion, not just Thanksgiving.
Yield: 12 Servings Preparation Time: 2 hours
•1 tsp. Fresh Sage Leaves, chopped
•3 Cups Day old Bread, cubed
•1 Cup Braising stock
•to taste Salt & fresh ground Black Pepper
•1 each Whole Egg
•4 TB. Whole butter, for sauté browning
•2 Each Turkey Thighs, de-boned with skin
•1 Each Turkey Breast, Seasoned with butter, salt & pepper
•1 Each Onion, large dice
•2 Each Carrots, large dice
•2 stalks Celery
•1 each Bay Leaf
•2 Cups Chicken Broth
Method of Preparation:
Begin by browning off the turkey legs and placing them into a shallow pan cover half way with water, place a lid and braise in the oven until falling off the bone. Remove and cool to room temperature in order to remove the meat from the bone and tendon. Strain the braising liquid.
In a large pot, sauté the onion and celery until translucent. Add the sage leaves and bread cubes and turkey leg meat. Moisten with the braising liquid; mix in the egg and season with salt & pepper.
Lay out the boneless turkey thigh, stuff with small amount of stuffing, just enough to be held inside when the thigh is rolled up. Roll up and place the seam on the bottom of a roasting pan. You can also tie using butcher twine. Roast at 350 degrees until 160 degrees internal temperature.
Season the turkey breast. Place the vegetable in the bottom of a roasting pan with the turkey breast on top. Roast at 350 degrees until 155 internal temperature. Remove from oven and cover with foil to retain heat and allow for "carry over cooking" to 165 degrees. Place the roasting pan on range top and stir in the chicken broth making sure to stir all the pan drippings from the pan and incorporate into the pan juice. Strain For the Presentation. Slice the stuffed turkey thigh and the breast meat. Serve with your favorite vegetable accompaniment and moisten with the reduced pan juices. Bon Appetite!

5. Thanksgiving Holiday Schedule Countdown:
Now: First off, take a deep breath, then pour a glass of wine. This is the time to stay calm. Read over your recipes to determine the ingredients you need and assemble your shopping lists. If you don’t have an award-winning turkey recipe yet, read the Wine Teaser below for Chefs’recipe or better yet, make reservations to celebrate Thanksgiving at one of our restaurants.
Don’t forget to order several of your favorite award-winning South Coast Winery wines. We’ve selected a few wines that go well with Thanksgiving Day Celebrations and, for a limited time, priced them at a very special rate to give you even more to celebrate:
Week of November 16: In addition to ordering your favorite South Coast Winery Wines, this is also the time to purchase any needed supplies such as table settings, napkins, serving dishes and wine glasses. Plan your cooking timeline, so you know which dishes need to be cooked when on Thanksgiving Day. It’s time to dig out your iron to press linens and polish silverware. It’s also time to buy your turkey if purchasing one that is frozen, but be sure to remember to put it in refrigerator on November 22 to begin defrosting.
Week of November 23: Prepare for your big day by heading to the GrapeSeed Spa early in the week with a girlfriend for some pampering: our special Sugar & Spice Spa Package has brought together the best of the best services the spa has to offer and wrapped them up in a yummy package for your enjoyment.
November 25: This is the day to chop your veggies, fruits and herbs for stuffing and seal in zip-lock style bags. Take this day to prepare any foods that can be made in advance such as dressings, dips and desserts.
November 26: Before you get started on the cooking, we recommend starting your day by slipping into your favorite pair of fuzzy slippers and turning on your favorite music. For an extra boost: Try making our special occasion mimosa: the Diamond Sunrise.
