With Spring finally here, our thoughts turn to warm, sunny days, outdoor gatherings with friends and family, and of course, dining on a lighter fare. Our Vineyard Rose Restaurant is adding several lighter selections to its lunch menu, and we've included one of our favorites you can make at home.

Tuscan Panzanella Salad with Bay Shrimp
Serves 4

Ingredients

6 oz Bay Shrimp
8 oz Focaccia Bread Croutons
1 oz Red Onion
2 oz English Cucumber
2 oz Diced Roma Tomato
1 oz Roasted Garlic Cloves
1 tbsp Green Basil
1 tbsp Whole Parsley Leafs
1 tbsp Sherry Vinegar
2 oz Extra Virgin Olive Oil
1 oz Grated Pecorino Romano
8 each Baby Artichokes
1 oz Extra Virgin Olive Oil
1 each Lemon Juice
1 tsp Chopped Fresh Thyme
Salt & Pepper to taste

Procedure

Season the focaccia croutons with olive oil and toast in the oven at 350 degrees for about 6 minutes or until crispy and golden color. Dice red onion, english cucumber and roma tomato.
Set aside.

Remove focaccia croutons from oven, place in a bowl and mix with vegetables and season with olive oil, sherry vinegar, and fresh herbs and add roasted garlic. Season to taste with salt and pepper.

Season the shrimp with salt and pepper to taste and sautée in a pan with olive oil. In the meantime clean the artichokes and keep in fresh water and lemon juice. Slice the artichokes thin and season with olive oil, lemon juice, chopped fresh thyme and salt and pepper to taste. Arrange the Panzanella on the plate, place the sautéed shrimp and top with artichoke salad. Drizzle with extra virgin olive oil.

Wild Women of Wine Country 5K Walk Thru the Vineyards

Be the difference you envision!!! Join us for this fun and invigorating 5K Wild Women of Wine Country Walk/Run Through the Vineyards, benefiting Michelle’s Place Breast Cancer Awareness Center. The course takes you strolling (or running) through the pristine vineyards of South Coast Winery, the new and upcoming Carter Estate Vineyards, and on to Falkner Winery before heading back to South Coast Winery Resort & Spa for a celebration, where music and refreshments await you. The first 750 registered participants will receive a commemorative T-shirt. Best of all, 100% of proceeds will help uninsured women and their families receive the much needed care and attention they deserve in screening for and coping with the effects of breast cancer.
